Scalloped Potatoes

4C. thinly sliced raw potatoes, with skins
2 C. water
½ C. clean raw cashews*
¼ C. chopped onions, or 1 t. onion pwd.
1 t. salt

Place potatoes in a baking dish. Blend cashews in about 1 C. of the water until very smooth. Add remaining water and other ingredients, except, paprika, and continue blending until smooth. Pour over potatoes. Cover and bake at 375 for 1-1 ½ hours. Remove cover, sprinkle with paprika, then return to over and continue baking until browned. Serves 6.

*To clean cashews place them in a colander and rinse thoroughly with boiling water.
